Enchilada Lasagna

What you will need:

1 jar of salsa
3-4 tortillas
cauliflower
tomatoes
1 red pepper
olives
corn
1 green zucchini 
1 TBL garlic
1/2 ground turkey
1 can black beans
1/4 tsp dried red peppers
1/4 tsp cumin 
1 tsp Italian seasoning
salt and pepper to taste
1 bag of cheese

Preheat oven to 425 degrees

Begin by browning the ground turkey.


While the meat is cooking chop up all of the vegetables that you want to use.


Once the turkey is completely browned add the black beans,
the garlic,
Italian seasonings,
dried red peppers, 
cumin,
and salt and pepper.


Then add in all the vegetables except for the tomatoes and olives.
Cook until warmed all the way through.

While the vegetables are cooking cover the bottom of an 8x8 inch pan with salsa.


Then add one layer of tortilla.
Tear the tortilla so that they are in small pieces and flat on the pan.
Then cover the tortillas with cheese.


Add in the tomatoes and olives.
Cook until warm.

Once the vegetables are all warmed then add half of the vegetables to the top of the tortillas.
Cover the vegetables with more cheese.

Then repeat the steps again.
Add tortilla, 
salsa,
cheese,
vegetables,
and cheese.

Finish with a tortilla topped with salsa and cheese.


Bake in the oven for 20 minutes.


Serve and enjoy!
