Vegetable Chicken Stir Fry

Oil Mix

If you are making the chicken and the vegetables then you will need to make this mixture twice.

2 TBL olive oil
1 tsp sesame seeds
2 TBL minced garlic
1 tsp ginger
1/4 tsp red pepper flakes


Add the olive oil, 


garlic,


sesame seeds, 


ginger and pepper flakes.


Mix it all together.

Sauce

2 TBL sugar
1 TBL flour
3 TBL red wine vinegar
1/4 cup soy sauce


Combine flour,


Sugar,


Soy sauce, and 


red wine vinegar.

Mix it all together until all the flour is dissolved.

Veggies and Meat
2 Chicken breasts
1 cup chicken broth
onion flakes
1/2 a bag of frozen broccoli or 1 head of broccoli
1 cup of mushrooms
1 red pepper

(This stir fry would be great with out the chicken as well, just the vegetables are fabulous!)


Slice the vegetables. 


In a sautee pan add 1 part oil mixture. 
Warm on medium heat until it starts to sizzle.


Add chicken.
(I always boil my chicken in water first. This insures that it is completely done and it makes it very moist!)
Stir the chicken so that it is all coated in the oil mixture.
Let cook until completely done.


Meanwhile, add the other part oil mix to another pan. 
Heat on medium heat until you hear it sizzle.
Then add the vegetables. 
Cook until warmed all the way through, but still crunchy.


Once the chicken is cooked through and a little browned, then add the chicken broth. 


Add the vegetables to the chicken mixture.

Serve over a warm bed of rice!
